Hummus ~ scrumptious & snackable spread.

Serve our authentic Hummus with pita

Ingredients:

1    pound dried chick peas
5    larger garlic cloves
½    cup extra virgin olive oil
¼    teaspoon ground cumin
½    cup tahini
1     tablespoon crushed red pepper
¼    cup fresh lemon juice
1    pinch of salt (salt to taste)
1    sprinkle paprika for garnish

Directions:

In a medium bowl, cover the fried chick peas with two inches of water and refrigerate overnight.

Drain the chick peas. In a medium saucepan add the chick peas with two inches of water and add the garlic cloves. Bring to boil. Simmer over low heat until the chick peas are tender, roughly 40 minutes. Drain, reserving at least 1/2 cup of the water on the side. Rinse the chick peas under cold water in a colander.

In a food processor add the chick peas, puree and add the reserved cooking slowly. Add the rest of the ingredients. Continue to puree and add the reserved water until the consistency is to your liking.
